During our last cycling excursion in Amalfi coast I have accompanied our customers at the local mozzarella factory... this is a special factory because all cheeses are maked by an old man....just 1 worker, from the milking to the curdle and the last step, the craftmade final product.
In the amalfi coast we have much types of cheeses : provola, ricotta, provola affumicata, caciocavallo, provolone del monaco, fior di latte.....
